Sweet Potato & Pea Curry

Good morning all, hope everyone is well. A few things have happened since last week’s post, one being that my nephew has had to have a new cast put on his leg which he has to wear for at least another two weeks, it’s smaller than the previous one and he excitedly managed to stand for the first time in weeks which he was happy about! Another thing that happened actually regards my Nan who fell between her sofas and was unable to move without causing herself pain due to hitting around her chest area and then developing some other symptoms not long after. She was took to the hospital on Monday as the pain didn’t seem to get better over the weekend to have an X-ray and to get her checked over, and thankfully nothing showed up on the scan and she’s now back at home resting.

Anyway, after that little life update, shall we move on with today’s post…as you all may or may not know I love a curry especially in the winter time as its a nice warming comfort meal, and with it being very cold at the moment and the energy prices being astronomical to the point where a lot of people are trying to come up with other ways to stay warm rather than putting the heating on, I thought sharing this recipe is one option you might want to try!

Sweet Potato & Pea Curry

Ingredients:

  • 3 tbsp Curry Paste From A Jar
  • 1 Onion, finely chopped
  • 450g Potatoes, cut into chunks
  • 2 Large Sweet Potatoes (about 900g) cut into chunks
  • 600ml Vegetable Stock, from a cube is fine
  • 400ml Can Coconut Milk
  • 175g Frozen Peas
  • Small Bunch Coriander, roughly chopped

Method:

Heat the curry paste in a large pan and stir in the onion.

Cover and cook for 5 mins, stirring occasionally, until softened. 

Add the potatoes, stock and coconut milk to the pan and bring to the boil.

Turn the heat down and simmer the curry for 20 mins until the potato has softened.

 Add the peas, bring back to the boil and simmer for 2 mins more. 

Season to taste and spoon the curry into bowls.

Scatter over the coriander before you tuck in. (I like to serve mine with rice as well

Like I mentioned earlier this is just one option in order to warm you from the inside, other ideas that you might want to try that have many variations are stews, casseroles, cottage pies, soup etc..
