One Pot Pasta with Quorn Vegan Pieces

Good morning everyone, did you all enjoy your weekend? I have to say it was very up and down for me as I enjoyed being able to spend some quality time with my dad as he had an extra day off because of it being a bank holiday weekend, but I also suffered from so much pain in my body due to my Fibromyalgia acting up and the temperature in the weather continuously going from hot to cold. But I’m not gonna moan on about that though, as everyone suffers with pain either on a daily basis or at some point in their life, so I don’t have to describe the feeling, as you might already know what its like or have some kind of an idea. Something else that wasn’t so great was finding out that my mum is more than likely going to be having surgery to sort the problem she’s currently suffering with out, although no date has been set as of yet, so because we’ve all been a little bit worried about what’s going to be happening next, and to cheer us all, but mostly my mum up, we watched the two new Comedy films on Netflix – Day Shift (starring Jamie Foxx and Dave Franco), and Me Time (starring Kevin Hart and Mark Wahlberg), both of which were hilarious and a must-watch! And very well needed after all the news that has been reported on social media and TV, especially where the energy crisis and the cost of living is concerned, so if your needing a laugh and want to take your mind off things – I highly recommend both films.

Anyway, on with today’s post… as the weather is changing and Fall/Autumn is setting in, I thought I would share with you a quick and easy recipe that is also budget friendly and perfect for when you don’t really feel like cooking much!

One Pot Pasta with Quorn Pieces

Ingredients:

  • 1 Pack of Quorn Vegan Pieces
  • 1 tbsp. Olive Oil
  • 1 Large White Onion, diced
  • 3 Garlic Cloves, diced
  • ½ tsp Smoked Paprika
  • ¼ tsp Chilli Flakes
  • 1 tsp Oregano
  • ½ tsp Vegan Worcestershire Sauce
  • 600g Passata
  • 600ml Vegetable Stock
  • 300g Penne Pasta
  • Small handful of Basil Leaves

Method:

Heat the oil in a shallow casserole pan and fry the onion and garlic for a few minutes until soft.

Add the paprika, chilli flakes, oregano, Worcestershire sauce, passata and vegetable stock and stir.

Add the penne pasta and simmer for 10 minutes, stirring occasionally.

Add in a packet of Quorn Vegan Pieces and leave for another 12 minutes.

  1. Season with salt and pepper to taste and serve with the fresh basil leaves.
