Hello everyone! 👋🏼💛 I hope you’re all doing well and have had a lovely week since I last caught up with you. Whether you’re joining me with a cup of tea ☕, taking a well-earned break from a busy day, or simply popping by to see what I’ve been up to, I just want to say a huge welcome back to my little corner of the internet. As always, thank you so much for taking the time to stop by – it honestly means the world to me, and I’m so grateful that you’re here. 🥹 Unfortunately, I wish I could start this week’s blog by saying that my ribs are finally on the mend and that I’m beginning to feel more like myself again, but sadly, that’s not the case. After what can only be described as a very violent coughing fit, I somehow managed to pop a rib on my right-hand side, and the pain has since spread right across my back and into my left-hand side too. As you can probably imagine, it’s left me struggling even more than before, and the pain seems to be constant no matter what I do. 😔 Because it was becoming so difficult to cope with, I arranged a telephone consultation with a doctor. She was incredibly kind and prescribed me a high-strength anti-inflammatory gel to see if it would help. She also offered pain medication, but unfortunately, I’m unable to take those. Sadly, the gel hasn’t made any difference whatsoever, so my next step is to try to get another appointment, hopefully one where I can be examined in person. I’m really hoping that might lead to having a scan so they can properly check what’s going on with my ribs and hopefully give me some answers. Fingers crossed, I can get seen sooner rather than later because I’d really love to know what’s causing all of this. 🤞🏼💛
On a much happier note, how amazing have England been in the World Cup? 🏴⚽ It’s been so lovely seeing everyone getting behind the team and showing their support. No matter what happens, I think they’ve been absolutely brilliant and have made so many people proud with their determination, teamwork, and never-give-up attitude. Moments like these always seem to bring people together, and it’s wonderful to see the country rallying behind them. I’ll certainly be cheering them on and wishing them every success as the tournament continues. Come on England! ❤️🤍
I know I mentioned in my last blog that I was hoping to bring you a positive update on the house situation this week. Sadly, though, I’m going to have to press pause on that for now. Recent events have had quite a big impact on my mental health, and at the moment, I just don’t feel ready to talk about everything that’s happened. I hope you don’t mind me keeping that part of my life a little more private for the time being. Sometimes we all need a little space to process things in our own time, and I think that’s the healthiest thing for me right now. Thank you, as always, for your kindness, understanding, and continued support—it genuinely means more than I can put into words. 💛
One thing that definitely made me smile this week, though, was a message my sister shared in our little family WhatsApp group. 🥹 She sent a few photos showing just how well both of my nephews are doing at school and nursery, and honestly, I couldn’t be prouder of them. My oldest nephew is absolutely excelling with his reading at school, which, as a huge book nerd myself 🤓📚, fills me with so much happiness. Seeing him develop a love of reading is incredibly special, and to top it all off, he also received a class winner award for earning the most house points—what an amazing achievement! 🌟 Meanwhile, my youngest nephew is coming on leaps and bounds at nursery and is smashing every new challenge that’s put in front of him. Watching them both grow, learn, and become more confident in their own ways is such a lovely reminder that it’s often these little family moments that brighten even the most difficult weeks. They both make me so incredibly proud, and I can’t wait to see what they achieve next. 💙

With the warmer weather here and summer in full swing, I thought it would be the perfect opportunity to share one of my favourite seasonal treats—a recipe that’s light, refreshing, wonderfully easy to make, and ideal for everything from family BBQs to sunny afternoons in the garden. There’s something about summer that makes life feel a little slower. The evenings seem to last forever, the sunshine encourages us to spend more time outdoors, and even the simplest moments—like sitting in the garden with a cup of tea and something homemade—feel that little bit more special. When the weather warms up, I naturally start reaching for lighter desserts. I still love something sweet after dinner, but I don’t always want to switch the oven on, especially when the house is already warm. That’s exactly why these mini no-bake lemon cheesecakes have become one of my favourite seasonal treats. They’re creamy, refreshing and full of bright lemon flavour, with a buttery biscuit base that gives just the right amount of crunch. Best of all, they’re wonderfully simple to make, leaving you with more time to enjoy those long summer evenings while the fridge does all the hard work. Whether you’re planning a picnic, inviting friends over for a barbecue, or simply treating yourself after a sunny afternoon, I hope these little cheesecakes bring a taste of summer to your table. 💛
Mini No-Bake Lemon Cheesecakes

Ingredients (Makes 6 Mini Cheesecakes)
Makes: 6 mini cheesecakes
Prep time: 25 minutes
Chilling time: 4–6 hours (or overnight)
For the base
- 150g Digestive Biscuits
- 75g Unsalted Butter, melted
For the filling
- 300g Full-Fat Cream Cheese (room temperature)
- 150ml Double Cream
- 50g Icing Sugar (sifted)
- Zest of 1 Lemon
- Juice of Half a Lemon
- 1 tsp Vanilla Extract
Decoration (optional)
- Fresh Lemon Zest
- Thin slices of Lemon
- Fresh Mint
- Fresh Strawberries or Blueberries
- Extra Biscuit Crumbs
👩🍳 Method
Crush the digestive biscuits until they resemble fine crumbs. Stir in the melted butter until the mixture looks like wet sand.

Divide the mixture evenly between six cupcake cases or dessert glasses. Press down firmly with the back of a spoon or the base of a small glass. Then, place them in the fridge while you prepare the filling.

To prepare the filling, beat the cream cheese in a large bowl until smooth.

Add the icing sugar, vanilla, lemon zest, and lemon juice, then mix again until silky.

In another bowl, whip the double cream to soft peaks.

Gently fold the whipped cream into the cream cheese mixture. Try not to overmix—you want to keep the filling light and airy.

Spoon or pipe the filling over each chilled base. Refrigerate for at least four hours, or overnight if possible.

Decorate just before serving with your favourite toppings.

🍋 My Own Little Twist
If you know me, you’ll know I can never resist adding my own little touch! My favourite way to serve these cheesecakes is with fresh blueberries, a tiny sprig of mint, and a sprinkle of crushed digestive biscuits over the top. It adds a lovely bit of texture and makes them look extra summery. If you try them yourself, I’d love to know what toppings you choose!
