Good Morning, all. How is everyone doing? Good, hopefully, 🤞🏼Now believe me when I say that it’s been a rollercoaster of emotions over the last two weeks — First, let’s start with the bad stuff that happened — my dad and I ended up having the worst argument we’ve ever had 🥺 it got so bad that it almost broke our father/daughter relationship to the point where we didn’t end up having anything to do with one another for a week, thankfully we’ve made up now and our relationship is stronger than anything 😁 My mum and I rang up our doctors to chase up about the request that the doctor put in for an MRI regarding a routine brain scan that I’m supposed to be monitored for, only to be told that it’s been rejected because the doctor didn’t put my new symptoms that have arisen down, so I’m having to wait to see if they can request it again with the added symptoms I’ve acquired. I also mentioned last time about being able to start my dental treatment at my dentist 🦷 but at the moment I’ve hit a road bump with the payment plan application, so again at the moment I’m having to wait to see if anything can be done, (right now all I seem to be doing is waiting 🙄). Now on with the good that’s happened which, to be honest, is only really one thing, which was we visited my aunt and great-aunt over the bank holiday weekend to celebrate my great-aunt’s birthday which was yesterday 🥳 she kept telling us we made her day and that she loved it, so I’m glad we managed to make her day special! Anyway, I’ve rambled on far too much, shall we get on to today’s post?..
Now on with this week’s post, as you’ve probably read from the title, today’s post is solely focused on a lemon meringue pie recipe which is one of my mum’s all-time favorite desserts (it’s in her top three), so whenever we get a chance when we’re not too busy (which isn’t often) we’ll either make our own delicious lemony goodness or on the rare occasion buy a ready-made one from our local supermarket to sit down with to have with a nice warm cup of tea/coffee! Now let’s get on with the recipe so you get to enjoy it too 😊
Lemon Meringue Pie

Ingredients
For the Pastry
- 175g (plus extra for dusting) Plain Flour
- 100g (1/2 Cup) Unsalted Butter, cold & cubed
- Good Pinch of Salt
- 1 Egg, beaten
- 1 tbsp Cold Water
For the Lemon Filling
- Zest of 3 Lemons
- Juice of 3 Lemons
- 85g Unsalted Butter
- 175g Caster Sugar
- 2 Medium Eggs
- 2 Egg Yolks
For the Meringue
- 3 Egg Whites (3-4 medium eggs)
- 1/4 tsp Cream of Tartar
- 75g (1/3 Cup) Golden Caster Sugar
- 1/2 tsp Vanilla Extract
Instructions
Pastry Base
Rub the flour, butter, and salt together in a bowl until it’s like breadcrumbs.

Add 3/4 of the beaten egg (save the rest for later) and mix to form a dough. If it’s too crumbly, add 1 tbsp of cold water.


Flatten into a disc, wrap in cling film, and rest in the fridge for 30 mins.

Roll out to 2-3 mm between two sheets of cling film.

Peel one layer off and lower into the tin. Press it into the sides then roll your rolling pin over the top to cut off any excess. Peel off the cling film and prick the base with a fork. Then chill while the oven preheats to 180°C/Fan 170°C.

Scrunch up a large piece of baking paper, place it in the pastry, and fill it with baking beans. Bake blind for 15 minutes.

Remove the beans and paper and brush with the remaining beaten egg. Bake for 10-12 mins more until golden. Cool completely. (Reduce the oven temperature to 170°C/Fan 160°C).

Lemon Filling
Put the lemon juice, zest, butter, and sugar into a large bowl. Set the bowl over a pan of simmering water (not boiling water!!) and stir the mixture occasionally till the butter has melted!

Beat the egg and egg yolks together in a separate bowl until well combined, and then pour the mixture into the lemon mixture.

Whisk all of the ingredients together so that they are combined well and whisk continually in the heatproof bowl for 10-14 minutes. Leave to go cold in the fridge whilst you make the meringue!

For the Meringue
Whisk the egg whites and cream of tartar together in an electric stand mixer with a whisk attachment until frothy. (You can also use a large bowl and an electric hand whisk)

Gradually add the sugar a little at a time then add the vanilla. Keep whisking until it JUST reaches the stiff peaks stage. You can tip the bowl upside down to find out – if the meringue stays in the bowl, it’s ready. It should be thick and shiny.

Spread the meringue onto the top of the pie, making sure you go right to the edges.

Bake in the oven for 15 mins until golden, then cool at room temperature for at least 1 hour before serving.

*Notes:*
- This will last in the fridge for 2 days!
- Don’t overwork your pastry or it will be tough and not very nice.
- If the dough too crumbly? Add a little bit of cold water to bring it together. Or if the dough is too wet? Add a little more flour to bring it back.
- If you Don’t own baking beans? You can use coins, dried peas, or lentils instead.
- Don’t chill the pie when you’ve added the filling to the crust. This can cause moisture to form on the top of the pie which can ruin the meringue.
- Stay with the meringue while it’s whipping. If you over-whisk it, it will weep (leak water) and deflate once baked.
- If you’re not sure when it’s at the stiff peak stage? Tip the bowl upside down – if it stays in the bowl, it’s ready!
- Spread the meringue right to the edges of the pie, completely covering the filling.

Thank you for the kind words. I struggle with obsessive compulsive disorder. I was diagnosed with ADHD when I was a child, but my parents didn’t want to put me on medications when I was younger. I am going to spend time with my friend now. We are going to a dive bar. We don’t drink alcohol. I like tea. She likes root beer. Talk to you later.

I also suffer with obsessive compulsive disorder. I have many friends who have ADHD, as well as a few family members, so I know how hard it can be sometimes to deal with. My cousin has been on medication his entire life which has helped him and also helped my aunt who struggled at times to cope whilst also dealing with her own mental health issues, but each to their own and the right to their own opinion (especially regarding their body and medication), I hope you had a good time with your friend! I’m not an alcohol drinker either 🙅♀️, I’m teetotal due to my conditions (not that I enjoyed alcohol before my diagnosis anyway), I love tea ❤️ never had root beer before but would love to try it! They thought I had ADHD then I think it formed into OCD. ADHD really didn’t do me good because it makes me a hyper person. I talked so much that nobody could keep up with me. I decided to talk all the time. Talking all the time annoys some people. It is hard to deal with. I think it is really hard to live without medication when you have a mental illness. I think your mental illness needs help to be controlled. Therapy is really helpful because you can talk about anything with a professional and it won’t leave the room. We went to the library then we went to a dive bar. I am glad you don’t drink either. I didn’t drink much before I got medication either. I love tea. I hate root beer. I don’t want root beer because I didn’t like it. You take care too.

It doesn’t annoy me! I don’t like silence, so I don’t mind if someone constantly talks, you find out interesting things about people that way. I agree it can be sometimes, I suppose it depends on if you have a good support system to rely on, or alternative methods that can help you cope, referring back to what I said previously – it depends on the person and their preferences! It sounds like therapy is really helpful for you, which I’m glad you’ve got someone to talk to! Sounds like you had a very productive day, did you have fun? I don’t really see the point in alcohol to be honest, it makes you lose your common sense and do bad/stupid things. We can be tea fanatics together then! 😁. Take care.

Thank you for talking to me about OCD. I appreciate you telling me things because I do liking talking a lot. If people talk to you then you get to know them. You get to know their quirks by getting to know them. You learn about things that make them click. You know their behavior. I get by talking to God, praying to God, talking to my family members, talking to my friends, talking to my OCD therapist, talking to my mental illness therapist, relaxing, meditating, I go to church and I talk to my church friends. My therapist really helps me because I can talk to someone without them telling my business because they have to keep my information private. I had a protective day. I had a great day. I hung out with my friend. We ate out. We went to the library. My friend got a library card. My friends are interested in renting books at the library. I don’t see any purpose of drinking at all. We have tea in common. We can talk about tea another time. I am happy that we are talking. See ya.

I agree, you definitely get to know a person better by talking to them! That’s good 👍 that you have so many people you can talk to. I tend to ‘talk’ a lot by writing things in my journal which helps me, for me it’s therapeutic, and also talking to my best friend who’s also my mum! but I know I can always talk to other members of my family too at anytime as we’re a very close knit. Your therapist sounds like they really listen to you and seem like a really nice person 😊 I’m glad you’ve got someone had a great day 😌 sounds like you were very busy. I love going to the library, books are a huge passion of mine, and libraries are a great place to go as you can just sit and read and transport into a whole other world. Okey dokey. You got to really talk to someone, if you want to get to know them. I have a lot of people that I talked to at Railway Clubhouse. I talked to a lot of people out of Railway Clubhouse. It is really good to journal online, so you can share your story or your post with anybody that looks at your WordPress. WordPress has helped me a better writer. When you are journaling it is therapeutic. Your best friend is your mom. You talk to your mom. My mediate family are close to me. I am close to my grandparents. I am not really close to anybody else in my family. I don’t to connect with them on social media because I don’t have social media. I have been really busy picking people up, taking people home, reception, cashier, doing the newsletter, they did everything in the afternoon, cleaning, relaxing and working too. My therapists do listen to me. They really care about my well being. They want to see my succeed in life. They want me to turn my life around. I love going on the computers. I like to get on Word to type up my pages then copy it then paste it on WordPress. I like to research things on the computer. I like to sit down. People leave me alone at the library. I am happy that you contact me. Be safe.

I agree with that statement about really talking to someone to get to know them! That’s good, at least you have a lot of people who you can talk to and will actually listen! I’ve not always been so lucky in that department, but I know I can always count on my family especially my mum 😁 I love journaling, but and while I do share quite a bit about my personal life on my blog, there are some things that I’m not ready to share (yet) that’s a bit too personal and hard for me to talk about, but I completely agree that’s therapeutic. Oh my god – me too, I was alright to begin with as I was advanced in English writing but doing WordPress has definitely helped me be more confident in writing and let me progress more! That’s the case for me too where my immediate family is concerned, I’m super close to my parents 👩❤️💋👨(we’ve been through a lot of tough times), and I have an unbreakable bond with my sister👯♀️ whose given me two amazing nephews who I dote on, and then I’m extremely close to my aunt and great-aunt. Sadly my grandparents are no longer around anymore 💔 but I was really close with them as well, we were a very tight knit family (still are). That’s very commendable 👏🏼 with not having social media, it’s not what it’s cracked up to be, it causes more trouble than anything, but for me it’s how I stay connected to people, otherwise I probably wouldn’t be on certain platforms. Sounds like you’ve been very busy, which is good as it makes your day go quicker and you’re never bored! 😃 That’s a good way to do it! I use the notes app on my phone which is very handy for me as I spend what seems like half my life in a car! At least you can do your work in peace without any interruptions 😊 Take care.

No problem! I’m ok thank you, how are you? At this moment in time, just having a bit of down time after a stressful couple of days. What are you up to? My weeks are always very busy as I never know whats going to happen as no two weeks are the same. What do you do? This weekend – I’ll just be spending it with my parents, having some quality family time as life has been very hectic as of recent and we haven’t had much chance to spend some quality time together.
