Morning everyone, hope you’re all doing ok. It has been a long and tiring week, and I mean that mostly down to the fact that I don’t think I’ve actually slept much due to my neighbors being so loud and keeping me and my mum awake all night everyday for the past week. I’ve got to say I’m amazed though, that I’ve managed to do some coursework and pass the mock exams that are essential to do after every module, with being so exhausted, I’m not entirely sure how my brain is still working, but it is! Not much has happened this week due to it being so cold to go out and our household being poorly, we’ve been ill for way over a month now, which I know is the same case for a lot of people – just when you think you’re finally getting over one thing…BAM…another bug/sickness hits – it’s never-ending. Get well soon to everyone in the same predicament.
Anyway, on with this weeks post… What do you get if you combine a chocolate bar that’s out of this world (corny pun there!) and a mini version of a cake? The answer of course is a Galaxy cupcake. I love cupcakes, especially ones that are light and fluffy, and I’m a big fan of a Galaxy chocolate bar (I also love a Dairy Milk as well), and the last time I made these were a few years ago, but I thought I would share with you the recipe I used!
Galaxy Cupcakes

Ingredients:
For the Cupcakes
- 150g Unsalted Butter
- 150g Light Brown Sugar
- 120g Self Raising Flour
- 30g Cocoa Powder
- 3 Medium Eggs
- 100g Galaxy Chocolate (chopped)
For the Buttercream
- 150g Unsalted Butter
- 300g Icing Sugar
- 175g Galaxy Chocolate (melted)
For the Decoration
- Galaxy Chocolate (optional)
- Galaxy Counters (optional)
- Sprinkles (optional)
Instructions:
For the chocolate cupcakes:
Preheat your oven – 180 C / 160 C fan / 350 F / gas mark 4 – and line a 12-hole muffin or cupcake tin with paper or silicone cases.

Beat together your butter and sugar, until light and fluffy.

Add in the flour, cocoa powder and eggs and beat until a lovely cake mix is formed!

Fold through the chopped galaxy chocolate!

Bake in the preheated oven for 20-25 minutes until risen and firm to the touch.

Allow to cool in the tin for 10 minutes before removing and cooling completely on a wire rack.

For the Galaxy chocolate buttercream:
Break your chocolate into chunks and melt it, either in the microwave or in a heatproof bowl over a pan of simmering water, until smooth. Allow to cool slightly.

In a large bowl, beat together your butter, icing sugar and cocoa powder until combined. For the best buttercream, beat it vigorously for a further 1-2 minutes or until it is noticeably paler and fluffier.

Stir the melted Galaxy chocolate into your buttercream, beating well to keep the texture light and fluffy.

For the Decoration
Now simply spread or pipe your Galaxy chocolate buttercream onto your cooled cupcakes however you like.

Add on some galaxy chocolate (i.e galaxy chunks, galaxy counters) and/or some sprinkles. Enjoy!
