Good morning, you wonderful lot! Hope everyone is well š¤š¼ I thought Iād managed to shift my cold that Iād told you all I had in my last post, but it has now come back with a vengeance, to the point where my chest feels very heavy (as if Iāve inhaled smoke, which I havenāt) and my nose is completely blocked𤧠Itās not stopped me from doing things though, as weāve still had a busy couple of weeks, and with Christmas coming up, itās only going to get busier, but I donāt mind as I like to keep active (as much as I can in a wheelchair) āæļø .
As I mentioned before, the past couple of weeks have been very busy, filled with appointments and meetings, with the added fun of my birthday š, so let me fill you in on a little bit more before moving on to todayās postā¦
To start with, we (my family and I) have all had appointments for various things- my dad went to the doctors to get some help for his mental health, as heās been suffering with depressive episodes for quite some time. Itās horrible to see him going through so much and keeping it bottled up inside, so I admire him for getting some help, as itās nothing to be ashamed of (looking after your mental health matters), and it doesnāt change my opinion of him at all š. Then, my mum had a couple of hospital appointments that were quite upsetting, which out of respect of her privacy, itās not my place to disclose (she has given me permission to say she was told they couldnāt repair an issue sheās had for the past 5 months) but we managed to cheer her up again after a lot of cuddles and letting her talk through how sheās feeling, whilst also letting her know weāre there for her. And finally, I had a couple of meetings regarding my finances, which is never fun but actually went quicker and smoother than Iād thought! I canāt really say anything further as I donāt know whatās going to happen next or how long itās going to take to process.
And to top it all off, I had my birthday š last Thursday, I had a good day spent with my family which Is all I wanted, we went out for the day to Manchester which was pretty fun 𤩠and I was even surprised when I got a few presents as I honestly wasnāt expecting anything as I hadnāt asked for anything (not with the way inflation is rising), but I cherish everything I was gifted (I always do) as it came from the heart and given to me with love š„° My sister also sent us a spam load of pictures of my nephews mainly at school, which Iām proud to say (Iām super proud of them anyway) that theyāre both doing exceptionally well and are showing people just how kind and funny they are š Anyway, Iāve rambled on far too long, so lets crack on with this weeks postā¦
Iāve always had a soft spot for Oreo cookiesātheyāre my go-to treat and a staple in my snack drawer. My love for these classic cookies inspired me to get creative in the kitchen, especially after seeing how much my nephews light up whenever cookies are around. Their excitement sparked the idea for this fun and delicious Oreo cookie recipe that brings together everything I love in one sweet bite! š
Oreo Cookies

Ingredients
- 125g unsalted butter/baking spread
- 100g light brown sugar
- 75g white granulated sugar
- 1 large/medium egg
- 1 tsp vanilla (optional)
- 250g plain flour
- 75g Oreo’s (finely crushed)
- 1 + 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp sea salt
- 150g white chocolate chips
- 150g dark chocolate chips
- 75g Oreo’s (chopped)
Instructions
Add the unsalted butter and sugars to a bowl and beat until creamy.

Add in the egg, and beat again. If using vanilla, add it in now!

Add in the plain flour, finely crushed Oreo crumbs (leave the creme middle in the Oreo when crushing), baking powder, bicarbonate of soda, and salt, and beat until a cookie dough is formed!

Add in the chocolate chips and chopped Oreo’s and beat until they’re distributed well!

Weigh your cookies out into eight cookie dough balls – they’re about 125g-130g each! Once they’re rolled into balls, put your cookie dough in the freezer for at least 30 minutes, or in the fridge for an hour or so!

Whilst the cookie dough is chilling, preheat your oven to 180Āŗfan, or 200Āŗc regular! If your oven runs hot, go for 160Āŗc-170Āŗc.

Take your cookies out of the freezer/fridge and put them onto a lined baking tray.

Bake the cookies in the oven for 12-14 minutes. Once baked, leave them to cool on the tray for at least 30 minutes, as they will continue to bake whilst cooling!

*Notes*
- You can easily freeze the raw cookie dough and bake it from frozen if you don’t want to bake the entire batch.Ā
- Chill time (if needed): If your dough is sticky, pop it in the fridge for 20-30 minutes before baking to make handling easier.
- You can make the dough ahead of time and refrigerate it for up to 48 hours before baking.
- Store the cookies in an airtight container at room temperature for up to 5 days, or in the fridge if you prefer them extra firm. They also freeze well.
- You can use any chocolate you fancy. You can use chocolate bars, chopped up, instead of chocolate chips; just make sure the chunks aren’t too big.
- These taste amazing slightly warm or crumbled over ice cream!
- Feel free to use different flavored Oreo’s (like mint, peanut butter, or birthday cake) to mix things up.
And there you have itārich, chocolatey Oreo cookies made with love and a little inspiration from my favourite cookie fans/monsters (my nephews) and my own Oreo obsession. I hope you give them a try and enjoy every bite as much as we do, as I had a lot of fun putting this together!
