Good morning! Hope everyone is doing well. The response to my previous post really touched my heart, thank you for being so understanding and the kind words regarding Thumper made me so happy as you’ll never know what they meant to me 😊 the past couple of weeks we have been inundated with various appointments, thankfully some of them have been on the phone 😅. My dad’s appointment on Monday went pretty good, he’s been referred to another doctor which I’m hoping will help him 🤞🏼, and he was also prescribed some tablets for his stomach. Then yesterday’s appointment for my mum at the hospital 🏥 has been confirmed that her next visit to the hospital will be for her operation which is just in a mere couple of weeks, so my focus will be on making sure she remains calm and has no stress beforehand, hopefully, I can make that happen 🤞🏼my superstar of a nephew whose only 4 years old also had his own hospital appointment he had to attend in person for, which my sister could’ve easily had a phone call with as it only took a mere 5 minutes to go through everything and then be let go, why do doctors 🥼 do that??
Anyway, onto this week’s post. As it’s one of my mum’s favorite meals, and she won’t be able to have it after the surgery for a while, we’ve been making some of her favorites (as well as my own—but shush 🤫 don’t tell her that). One of the dishes we made was, of course…Quorn Fajitas (a go-to in our house), and I thought I would share the recipe we often use with you!
Quorn Chicken Fajitas

Ingredients
- 2 x Peppers (Cubed/or sliced) 🫑
- 1 Garlic Clove (chopped)🧄
- 500g Quorn Chicken Pieces
- Salsa Sauce (For Fastness I Use an Old El Paso Jar plus the sauce in the kit)
- Fajita Kit (Our favorite to use is Old El Paso)
- Served with Wedges/Salad
- Salt 🧂 and Pepper (to season)
Method
Pre-heat the oven to Gas Mark 3/170°C (325°F) put the Quorn Chicken on a medium shelf and cook for 20-25 minutes ⏲️

Whilst the Quorn chicken is cooking, prepare the peppers 🫑 and garlic 🧄

5-10 minutes before the Quorn chicken is finished cooking, put a little bit of oil (of your choice) and fry 🎛️ the peppers and garlic together.

Once the peppers and garlic are cooked, put all the ingredients into a saucepan and season with a seasoning of salt 🧂and pepper.

Pour the salsa sauce into the pan and mix it all together, ensuring it’s covered evenly.

Take the fajita wraps out and put them on a plate 🍽️ then dish out the fajita mixture evenly between the wraps. Roll the wraps to your liking.

Serve with wedges and/or salad and enjoy 😊

*Side note: if serving with wedges, put them in at the same time as the Quorn Chicken*
*Tip* if you want the fajita wraps 🫓 warmed up – either put them in the microwave for 45 seconds or place them in the bottom of the oven on another tray for 1-2 minutes*
I hope you find it just as yummy as we do! You can also put some extra lettuce into the fajitas and put it on the side.
